Rice Krispie Granola Squares

These aren’t granola bars, but aren’t Rice Krispie squares either – they’re my attempt to create a quick and easy homemade granola bar that doesn’t have a thousand steps and isn’t really a dessert either. You can change the fruit, nuts, etc, but if you change the cereal, it may not turn out quite right (trust me, I know).

Rice Krispie Granola Squares

  • 1/4 cup butter
  • 1 bag large marshmallows
  • 1 cup large flake oats
  • 1/2 cup currants
  • 3/4 cup raisins (I like Sultanas or Golden raisins, make sure yours are seedless)
  • 3/4 cup peanuts (I like the roasted salted no name peanuts, in the popcorn aisle – so good)
  • 3/4 cup Bran Buds
  • 3/4 cup Rice Krispies

First, put the oats in a non-stick frying pan over medium heat and toast them – the same as you would toast raw nuts. Watch them carefully, they burn easily. Set them aside once toasty.

Measure out and have all the other ingredients ready nearby. Liberally butter a 9 x 13 dish.

Melt the butter in a large pot over low heat, add the marshmallows and stir until the marshmallows are melted. Remove from the heat and add everything else, stir thoroughly until it’s well combined. Pour into the buttered dish, wet your hands and, working quickly, press the squares into the pan – press firmly so they’re denser and stay together better.

Let them cool and set before cutting into squares. Don’t refrigerate, leave them on the counter and they’ll keep for a few days.
