Cucumber Pineapple Salsa

It’s mid March, the snow keeps coming, and we’re craving bright, fresh, summery flavours but the grocery store options make that hard. This salsa tastes like sunshine and the pineapples in the stores can be pretty nice.

  • 2 tbsp lime juice (about one lime)
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 3 mini cucumber finely diced, you can remove the seeds if the cucmbers are a bit larger, you want each piece of diced cucumber to have skin on it, it helps keep it firm and crispy
  • 1 ½ cup finely diced fresh pineapple
  • 3 green onions, thinly sliced
  • 1 jalapeno, minced – I remove the seeds and ribs
  • Salt and pepper to taste

Whisk the lime juice, honey and oil in the bowl you’d like to serve / keep the salsa in. Mix the rest of the ingredients in except the salt and pepper. Stir well so the dressing and fruit/veg are well blended and let sit for a couple of minutes before you add salt and pepper. Remember salt will draw the moisture out so if you’re not serving the salsa right away, wait to add any salt.

This keeps in the fridge but not for days, the fruit/veg will break down.

Serve with tortilla chips.
